On the lower chamber, I am getting extremely out of range readings that do not match actual or set temp. Could this be the temp probe? if so, where is it located and how do i get to it to replace it? thanks.

Item #3 in the drawing below. You may be interested in item #39, enhancement kit for both probes. Could also be the control board but most likely a bad connection between the probe and the control.

I should add...
I was refering to a Gen 5 warming cabinet with the small black temp adjustment knob and sliding control cover panel. Since the 2 pictures shown here (above left) are for 2 different models. If yours has a blister touch pad for temp control, I would still verify connections, but it is most likely a defective control board.
