Does anyone have the procedure for Calibrating the touch screen display on the Steris V-116 Sterilizer? I have a unit that does not respond correctly in different areas of the screen.

It is not possible. You can either learn the needed offset or try replacing the display, however, I have seen brand new displays have an offset straight out of the box, normally to the left of what you are actually trying to touch.
I use a retracted writing pen like a stylus, seems to help.
